Oven-Fried Flat Chicken
If you don’t have a meat mallet, you can substitute a can from your pantry, a rolling pin, or even the bottom of a heavy glass. Try the variation (see FAQ below) for chicken nuggets!Â
Serving Suggestions: Â Oven-Fried Flat Chicken goes great with baked french fries or baked onion rings, steamed broccoli or a crisp green salad, and a tall glass of cold lemonade.

Prepare the pan
Preheat the oven to 350 degrees. Coat a baking sheet with vegetable oil spray.

Flatten the chicken
Pat the chicken dry with paper towels. Place the chicken between sheets of plastic wrap, and with the flat side of a meat mallet, pound the chicken from the center out until it is approximately 1/4-inch thick all around.

Prepare the coating
Put the crushed cornflakes or breadcrumbs into a large plastic zipper-top bag along with the garlic salt, pepper, chili powder, and flour. Shake the bag to mix it well.

Dip the chicken
In a shallow dish, lightly beat the egg white. Dip the flattened chicken breasts in the egg white, coating both sides.

Coat the chicken
Add the chicken breasts to the bag with the crumb coating, and shake it lightly. Be sure both sides are coated with crumbs.

Bake the chicken
Place the chicken on the prepared baking sheet. Bake it for 15 minutes, or until the chicken is cooked through.
