Creamy Hummus
Tahini is sesame seeds, ground into a fine paste much like peanut butter. It can be found in jars in the natural foods or peanut butter section of many supermarkets, or at organic food stores.

Instructions
-
Blend the tahini and lemon juice
In a food processor, combine the tahini and lemon juice and process it until it is well mixed and creamy.
-
Add the chickpeas
Add half of the drained and rinsed chickpeas, and blend them until the mixture is smooth, scraping down the sides of the food processor with a rubber spatula as necessary. Add the remaining chickpeas and blend the mixture again until it is smooth.
-
Add the rest of the ingredients
Add the garlic, salt, and olive oil and blend the hummus for several minutes. Add the water, a tablespoon at a time, to get a nice creamy consistency. You may need to add more than 2 tablespoons.
-
Garnish and serve
Spoon the hummus out into a serving bowl and sprinkle it with the paprika.
