Baked Lemon Garlic Chicken

  1. Brine the chicken
    In a large bowl, combine the salt, sugar, dried red pepper flakes, bay leaf, garlic, and water. Add the chicken breasts, cover the bowl, and refrigerate it for 2 hours.
  2. Prepare the lemon

    Cut the lemon in half. Cut a 1/4-inch-thick slice from each side of the halved lemon, and set the slices aside. Squeeze the juice from the rest of the lemon and set it aside.

  3. Prepare the pan

    Preheat the oven to 350 degrees. Drizzle 1 tablespoon of the oil into an 8x8-inch glass baking dish.

  4. Bake the chicken

    Remove the chicken from the brine and pat it dry with paper towels. Discard the brine. Place the chicken in the baking dish. Set the lemon slices on top of the chicken, and drizzle it with the reserved lemon juice and remaining tablespoon of olive oil.

    Bake the chicken for 30 minutes, or until it is cooked through.
